Viticulture:
Maturana “la cabernet riojana”. As it is not grown anywhere else in the world, it is very interesting to increase the originality, differentiation and diversity of the wines. It is very late budding and yet its vegetative cycle is short and reaches maturity quickly. Sensitive to botrytis, it is not usually affected since its collection can occur even earlier than the earliest white varieties.
Their berries and bunches are small, half that of Tempranillo. The harvest is expensive in time and very delicate. It is collected with more than 14 degrees for optimal ripening.
The grapes come from the farm ̈Chillarán ̈ (Altitude 480m), of Labastida, one of the noblest areas of Rioja Alavesa. It has a beautiful environment, with a perfect sun exposure, sheltered from the cold winds of the north. The maturana tinta variety is very vigorous, it appreciates soils with low humidity and good drainage, Chillarán perfectly meets these conditions.

Viniculture:
Acidity is a key factor. This grape absorbs a lot of potassium (it is common to see this lack in the leaf, in the ripening phase), so the fall in acidity in fermentation is important (high pH), giving wines of long persistence and very kind to drink.
The aging of 6 months in new American barrels enhances the varietal characteristics without providing excess toasted notes thus respecting the variety.
It gives very powerful wines: of tremendous violet red color due to its high polyphenolic content; very aromatic, with unmistakable aroma of paprika, black pepper (pyrazines), herbaceous and balsamic notes, similar to French varieties, differentiated organoleptic characteristics considered of high quality. In the mouth it is very soft, provides surprisingly round tannins.
