TASTING NOTE – this wine is all about texture and complexity, from the extended contact with the Chenin skins prior to fermentation.
WINEMAKING – hand harvested whole bunch Chenin Blanc was cold macerated on the skins for 72 hours before pressing. It underwent wild fermentation and partial malo in barrel and was further barrel aged on the fine lees for 8 months in 500L older French oak barrels.
RAAR, meaning rare or scare embodies passion for the Swartland terroir, showcasing lesser-known varietals and intuitive winemaking.
RAAR is indeed rare, with only a few barrels made of each wine, the RAAR collection is truly a collectors wine.
