Grapes: 80% Black Grenache and 20% Syrah.
Terroir: Commune of RASTEAU, the vineyards are located at an altitude of 250 m. Land of hillsides with stony clay-limestone soils and very steep.
Viticulture: The soil is worked in its entirety with respect for the environment and the plant.
Vinification: Manual harvest. Egrappage and treading. 28 to 35 days. Daily pigs during alcoholic fermentation as well as two to three offloads. The wines are aged in stainless steel vats for 9 months.
Tasting notes: Intense red dress with purple highlights. We discover on the nose spicy aromas, typical of the terroir of RASTEAU. The mouth is full, structured on spicy notes.
Accords: Grilled, grilled eggplant, fricassee of mutton with green peppers, auvergne blue.
